Heat the oil in a frying pan and add the chopped onion. Fry until golden brown.
Whilst the onion is frying, chop the chillies and coriander, and cut the cod into 2-inch pieces.
Add the cinnamon, ginger, garlic, ground spices and bay leaf and fry for 1 minute.
Add the yoghurt, coriander, chillies and salt and stir together.
Add the water and simmer for 2 – 3 minutes.
Place the cod pieces in the pan and stir into the sauce.
Cover the pan and simmer for 15 – 20 minutes.
Serve with basmati rice and flat bread.
