Crab Linguine

Serves 2 – 4

  • 500g linguine

  • 1 x 450g dressed crab
  • Fresh chilli to taste
  • 2 cloves garlic, peeled and finely chopped
  • Zest of 1 unwaxed lemon

  • 3 tbsp of freshly squeezed lemon juice

  • 5 tbsp extra virgin olive oil

  • 3 tbsp of freshly chopped flat leaves parsley

  • Parmesan shavings

Cooking Method

Scoop out the meat from the crab shell into a bowl and mix together the white and brown meat.

Heat the oil in a large frying pan, and on a low heat fry the garlic and chilli together for 30 seconds.

Add in the crab with the parsley, lemon juice and zest. Cook for one minute until the crab is heated through. Season with salt and set aside.

Cook pasta to taste.

Once the pasta is cooked, drain and tip back into the same pan (away from the heat).

Pour over the crab sauce, stir, add Parmesan shavings and serve.
