Mackerel with Bay and Lemon Seasoning

Serves 2


  • 2 Fresh Mackerel
  • Bay leaves - dried or fresh
  • Black Pepper
  • Salt
  • Lime or Lemon Juice

Cooking Method

Preheat the oven to 220°C

Place the fish on a piece of aluminium foil on a baking tray

Season the fish with salt and pepper

Stuff the bay leaves inside the fish and add the lemon or lime juice over the top

Wrap the fish in the foil folding the edges in and over so the juices cannot escape

Place in the oven for approx. 25 - 30 minutes

Remove the heads and tails of the mackerel and serve with the peas and buttered bread
