Lobster Thermidor

Serves 2


  • 1 large lobster (approx. 1.5kg) - cooked
  • 2 shallots
  • 25g of butter
  • 125ml of white wine
  • 200ml of thick bechamel sauce
  • 1tsp of english mustard
  • 2tsp of finely chopped tarragon
  • 50g of cheese
  • Pinch of cayenne
  • Sea salt
  • Ground black pepper

Cooking Method

Remove all of the meat from the lobster and place in a bowl

Gently cook the shallots in the butter in a frying pan until soft

Add the white wine and simmer until it has almost evaporated

Add the bechamel sauce and mustard, stirring well

Remove from the heat and add the tarragon, cayenne and ¾ of the cheese. Stir until the cheese has melted

Pour the sauce over the lobster meat and stir to ensure each piece is covered

Add the salt and pepper

Scatter over the remaining cheese and place under a hot grill until browned and bubbling

Serve with a green salad
