Mediterranean-Style Baked Ling Fillets

Serves 4


  • 4 ling fillets (approx. 175g each)
  • 250g of cherry tomatoes - halved
  • 50g of pitted black olives
  • 2 tbsp of capers in brine - drained
  • Rind and juice of one lemon
  • 2 tsp of thyme leaves
  • 2 tbsp of olive oil

Cooking Method

Preheat oven to 220°C

Combine the tomatoes, olives, capers, lemon rind, thyme and oil in a roasting pan

Add salt and pepper

Place the fish into the pan in a single layer, spooning some tomato mixture over fish

Drizzle with lemon juice and bake for approx. 15 minutes

Remove from the pan, drizzle with more mixture and serve with potatoes and green salad
