Pan-fried Dover Sole Fillets

Serves 4


  • 1 large knob of butter
  • 8 double fillets of Dover sole
  • Half a cup of flour
  • 2 tbsp of extra virgin olive oil
  • Salt
  • Pepper

Cooking Method

Place the fish in the flour and turn until it has an even coating.

Place half the butter and two tablespoons of oil in a large frying pan on a medium heat.

Shake excess flour from the fish and fry gently on one side for 3 minutes.

Turn the fish, add the rest of the butter, and fry for a further 3 minutes.

Serves with new potatoes and salad.
