Parsley and Lemon Stuffed Herring

Serves 2 - 3


  • 6 Herrings
  • 2 tbsp of breadcrumbs
  • 1 tbsp of finely chopped suet
  • 1 tsp of chopped parsley
  • ½ tsp of grated lemon rind
  • Salt
  • Pepper
  • Milk

Cooking Method

Wash and split the herrings and remove the backbones

Mix together the breadcrumbs, suet, parsley, salt, pepper and lemon rind, and add enough milk to moisten Season each herring with salt and pepper

Spread a thin layer of the mixture on the herrings and roll up tightly, beginning with the neck Pack closely in a greased pie-dish, cover with greased paper and bake for approx. 40 – 50 minutes on Gas Mark 4 (350° F)
