Tandoori Halibut

Serves 4


  • 4 Halibut Steaks
  • 1 pint of natural yogurt
  • 1 tbsp of cumin powder
  • 1 tbsp of garam masala
  • 1 tsp of coriander powder
  • 1 tsp of tumeric
  • 1 tsp of chilli powder
  • Juice of 1 lemon
  • 8 cloves of garlic - crushed
  • Red food colouring

Cooking Method

To make the tandoori marinade, mix the spices, colouring, lemon juice and garlic up into a paste with a little water

Marinate the fish in the sauce for 2 hours

Preheat the oven to its highest heat for at least 20 minutes

Shake off any excess marinade and place the fish on a wire rack in the oven

Cook for approx. 15 minutes and serve immediately
