Tuna Nicoise Salad

Serves 2


  • 2 Tuna steaks
  • 4 new potatoes – sliced lengthways into 4 pieces
  • 2 plum tomatoes - chopped
  • 60g of French beans
  • 2 little gem lettuce hearts –sliced lengthways into 4 pieces
  • half red onion - finely sliced
  • 2 hard boiled eggs – cut into halves
  • 8 pitted black olives
  • 4 basil leaves

    Ingredients for dressing:

  • 7 and half tbsp of extra virgin olive oil
  • 1 and half tbsp of red wine vinegar
  • 1 tbsp of chopped parsley
  • 1 tbsp of fresh chives
  • 1 garlic clove
  • half tsp of salt
  • half tsp of black pepper

Cooking Method

To make the dressing, mix the red wine vinegar, olive oil, parsley, chives, garlic, salt and pepper together.

Place the tuna in a shallow dish and pour over half of the dressing, and leave to marinate for approx. 90 minutes, tossing the marinade from time to time.

Cook the tuna steaks on a griddle pan for approx. 2 - 3 minutes on each side, and once removed cut into slices.

Lay the lettuce leaves onto a large plate and add the onion, tomatoes, potatoes and beans, along with the tuna slices.

Add the eggs, olives and basil leaves, and drizzle over the remaining dressing.
